RS/YW Christmas Dinner

Thank you to everyone who came to our Sisters/YW Christmas Dinner.  Thank you also to all those who helped make our dinner a success.  Much time, thought, and effort was put into the activity last night and I know it wouldn't have been such a great success without them.  So Thank you again! It was a ton of fun, full of laughter and great food.  A few of you had asked for the recipes from the dinner last night so here they are;

Lion House Ranch Chicken
3/4 cup cornflakes, crushed
3/4 grated parmesan cheese
1 package Ranch Salad Dressing Mix (The dry packet)
8 boneless skinless Chicken Breast halves
1/2 cup butter, melted

In a shallow bowl, combine the cornflakes, parmesan cheese, and salad dressing mix. Dip chicken in melted butter, then roll in cornflake mixture to coat.
Place chicken breast in a greased 9x13 inch baking dish. Bake, Uncovered, at 350 degrees for 45 minutes or until juices run clear.

Scalloped Potatoes and Ham
3 pounds Russet Or Yukon Gold Potatoes, washed thoroughly
2 Tablespoons Butter
1 whole Yellow Onion, diced small
3 cups Diced Ham
1-1/2 cup Half-and-half
1-1/2 cup Heavy Cream
1/4 cup Flour
Black Pepper To Taste
1 cup Grated Cheddar Cheese
1 cup Grated Monterrey Jack Cheese

Preheat oven to 350 degrees. Butter a large casserole dish.

Heat butter in a large skillet. Add onions and cook for 1 to 2 minutes, or until they start to turn translucent. Add ham and cook for 3 to 4 minutes until thoroughly heated. Remove from heat and set aside.

Combine half-and-half and cream in a microwave-safe container and nuke for a minute or so, until no longer cold. Whisk in flour and black pepper until totally combined. Set aside. (You may add salt, but cheese and ham are salty, so add sparingly.)

Combine the two grated cheeses. Set aside.

Using a mandoline or slicer, slice potatoes into 1/8-inch slices (very thin.) 

Layer 1/3 of the potato slices in the buttered casserole dish. Sprinkle on 1/3 of the ham/onion mixture, then 1/3 of the cheese, then pour on 1/3 of the cream mixture.
Repeat this twice more, ending with a sprinkling of cheese and a pouring on of the rest of the cream mixture. 

Cover dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 20 minutes at least, or until bubbly and hot.

Apple Cranberry Salad Toss
1 pkg. (10 oz.) torn mixed salad greens
2  apples, sliced (tossed in lemon juice or fruit fresh)
3/4 cup  dried cranberries
3/4 cup  candied walnuts or pecans 
2  green onions, sliced (optional)
1/2 cup  KRAFT Lite Raspberry Vinaigrette Dressing

TOSS greens with fruit, nuts and onions.

ADD dressing just before serving; mix lightly.
